Happy Monday! This weeks goals! I have been skipping a lot of weekday workouts because I feel like I’m running out of exercises I can do, but I’m determined to get more creative this week! I’m at the pointy end of my cert 3 and just want it crossed off my list so I’m prioritising getting it finished this week! And the last one- I usually read about a book a month but I’m yet to finish one this year- I need to make more time for things I enjoy. Usually this would be hiking or walks with the doggos, but while that’s a no go need to replace it with other things I enjoy. Get the bbq's ready, daylight saving is here and long summer nights are coming! 🌞🌞⁠ ⁠ These simple and tasty beef burger patties will be a winner! When you make your own burger you, have control of what goes in them and can pack them full of nutritious ingredients! These patties are great to use as a leftover lunch meal the next day where you can add to a salad, put in a wrap or make another burger! 😛😛 Recipe below.⁠ ⁠ Ingredients (serves 4-5 ) ⁠ ⁠ 500gm premium beef mince⁠ 1/4 cup oats ⁠ 1 egg⁠ 1.5-2 tbsp curry powder⁠ Salt/ pepper⁠ 1 tbsp paprika ⁠ 1 tsp chilli flakes⁠ 2-3 tbsp tomato chutney⁠ 1 tbsp Worcester sauce ⁠ 2 tbsp olive oil ⁠ 300-500gms Kumara, sliced into chip sizes ⁠ 3-4 tbsp olive oil⁠ 4 sprigs of rosemary, salt/pepper ⁠ To Serve:⁠ Wholemeal/ GF/ Paleo Buns Lettuce, sliced tomato, beetroot, gherkins, grated carrot, avocado, shredded cheese, tomato relish⁠ ⁠ Method ⁠ Preheat oven to 180 degrees fan bake. Combine mince, curry powder, oats, egg, seasonings, tomato chutney, Worcester sauce and chilli flakes. Use a tablespoon and roll out mixture to form approx 10-12 small balls then press down with a fork into a meat pattie. You can choose to make these large patties or smaller ones- whatever your preference. ⁠ ⁠ For the kumara fries- Place fries onto a baking tray lined with baking paper and drizzle with olive oil. Season with salt/ pepper and rosemary. Bake in oven for 30-35 mins until crispy. ⁠ ⁠ Heat a fry pan over medium heat with 2 tbsp olive oil. Place patties into fry pan and cook at medium heat for approx five mins each side (or cooked to your liking ). ⁠ ⁠ Plate up onto some wholemeal/ paleo/ GF buns and add your toppings (my fav are grated carrot/ beetroot, tomato relish, tomatoes, spinach, gherkins, cheese and sunflower seeds ). Serve with the kumara fries and a side salad.

Although my meals are usually very simple, and I tend to not really think of them as "real" recipes, I'm going to try to share more details on the meals I make! What do you think, will that be useful for you? 🤔 Anyway, here's maybe not the prettiest meal but it's VERY easy and delicious: Szechuan Tempeh Stir Fry *Makes 3 Servings* Ingredients: - 1 8oz package plain tempeh - 1 eggplant, chopped - 1/2 bunch asparagus, chopped - 3 tbsp oil - 1 tbsp minced garlic - 1/4 tsp red pepper flakes (or to taste, add more if you like 🔥 ) - 1/3 cup low sodium vegetable broth - 1/3 cup hoisin sauce - 2 1/4 cups cooked brown rice Directions: - Heat oil in pan on medium high - Add tempeh, chopped eggplant and asparagus and saute until vegetables are very tender and tempeh is beginning to brown, around 10 minutes - Add garlic and red pepper flakes and cook until fragrant, under one minute - Add vegetable broth and hoisin sauce and stir to cover all ingredients - Bring to a simmer and let them cook for about 2 more minutes - Remove from heat and serve with 3/4 cup brown rice - Optional: Top with green onion or sesame seeds Save this recipe for your next meal prep! 😋

Mushroom Chicken In White Sauce 😋🍄🐔 ⁣ Tag someone who would love this 😍⁣ ⁣ This recipe takes just 25 minutes to make. It's super easy, delicious, Keto-friendly and gluten-free⁣ ⁣ 📝INGREDIENTS📝⁣⁣ (For 4 Servings )⁣⁣ 2 Tbsp olive oil⁣ 1.5 Lb (700g ) chicken breast⁣ 1 medium onion, diced⁣ 6-8 cloves garlic⁣ 1 oz. (30g ) sun-dried tomatoes, chopped⁣ 10 oz. (300g ) mixed mushrooms, sliced⁣ 3/4 cup chicken stock⁣ 1 cup heavy cream⁣ Salt and pepper - to taste⁣ 10 sprigs of fresh thyme - divided⁣ ⁣⁣ 👩‍🍳PREPARATION👨‍🍳⁣⁣ 1. Season the chicken breasts on both sides with sea salt and fresh ground black pepper.⁣ 2. Heat oil in a large skillet over medium heat, and brown the chicken, for about 2-3 minutes on each side (at this point, the chicken will not be fully cooked as we will continue to do so, later on, with sauce ). Set aside.⁣ 3. In the same preheated pan, add the onions, garlic, sun-dried tomatoes and mushrooms, and sauté for about 5 minutes.⁣ Take half of the thyme sprigs, pull the leaves off of the stems and add them to the pan. Garlic salmon with cilantro lime cauliflower rice⏩ INGREDIENTS @sizzlefishfit salmon Riced cauliflower Cilantro Onion Vegetable stock Minced garlic Lime juice Sea salt Olive oil Tomato Avocado . DIRECTIONS Heat up olive oil + minced garlic on the stove while sautéing. Then add in riced cauliflower from, onion, & vegetable stock (a splash at a time until everything softens ). Lastly, add chopped cilantro & lots of lime juice & mix everything tg. I cooked the salmon on a George Foreman grill with olive oil & garlic. Serve the cauli with tomato, avocado, hemp seeds, the salmon, and a sprinkle of sea salt.

RECIPE⤵️🤪👌🏻🎉 •1 pineapple 🍍 •1 mango 🥭 •1tbsp chia seeds •1/4 cup of coconut milk •1/2 tsp curcumin powder - for vibrant yellow colour- from @theorganiclab .eu Blend all the ingredients until combined.
