Piri-Piri Chicken With Blue Cheese Dip And Sweet Potato Wedges from the Sept/Oct SW Magazine for tea tonight. Yes, it's not exactly the weather for a BBQ but I cooked my chicken drumsticks in the oven. It was absolutely gorgeous, easy to make and only 2 syns. I added cucumber into the salad and it added that extra crunch. So good! We went to the Clarendon Hotel on Blackheath for my birthday lunch. It was all very safe with well spaced tables. I chose chargrilled prawns as a starter followed by lamb rump with seasonal vegetables. I didn't fancy wine so had a gin and tonic. We saw desserts being brought to other diners. Nothing particular caught our fancy so I decided to have something when I got home. Swipe to see my main course. It did amuse me that my meal had been placed on one half of the plate. Homemade ramen made with brien rice and millett ramen noodles by Lotus Foods. Seasoned with sautéed garlic, jalapeños and sliced mushrooms in 2 minutes. Added two cups of vegetable broth bring to a boil. Added fresh bok choy from my garden and ramen noodles. Season with low soy sauce, hot pepper flakes and sriracha. This is not meant to scold anyone because sometimes our thoughts are subconscious. And we mean well, most of us do at least. HOWEVER... my goal (or hope🤞🏽 ) is that people really think about being in someone else’s shoes. Which is hard, if you don’t know or just aren’t aware of someone else’s reality. It never fails that whenever I post a you don’t have to shop for organic only post, someone comments that it’s really not that expensive. Ummm okay great, I’m glad YOU can afford it. But you do realize not everyone has your paycheck or your means? Sometimes people say that people should really just try to look for produce because they can’t possibly fathom fresh produce not being readily available. I know it’s hard to believe, but grocery stores are not close and easily accessible to EVERYONE. Great that it’s available to you. If someone makes a statement and your comeback involves the words “I”, “me”, “mine”, or “my”, you are making that statement about you. Do you love salted caramel? Then you need to try these almond caramel cups!! They are so easy and made with simple ingredients. Keep them in the freezer and you have a delicious, healthy treat anytime! . 💛keto 💛paleo 💛vegan . Ingredients Bottom layer: 1/2 cup almond meal ( @lovepbco - code: countdowntildinner10 ) 1/2 cup walnuts 2 tbsp cacao powder 2 tbsp coconut oil 3 tbsp maple syrup (sugar free if keto ) Pinch of salt . Caramel layer: 1/2 cup almond butter 1/3 cup maple syrup (sugar free of keto ) 1/4 cup coconut oil 1 tsp vanilla extract Pinch of salt . Directions 1. For the bottom layer, combine all the ingredients in a food processor and process until formed 2. Press mixture into silicone muffin trays. Freeze for 15 minutes 3. Combine all the ingredients for the caramel. Mix well then pour on top of the bottom layer. Freezer for at least 1 hour. Optional: drizzle chocolate @vitawerx and top with a sprinkle of sea salt . Enjoy 😊

let me just tell you guys about these pb smores bars from @wholesomelysophia . seriously i n s a n e. definitely one of my favorite recipes i’ve tried. highly suggest checking out her account (for this recipe, but also for everything else she posts because she is seriously amazing ) ✌️✌️ yesterday i got to spend the day at an amusement park with a friend, and although i wasn’t really thinking about it at the time, looking back i’m really thankful for everything recovery allowed me to do. my breakfast came from a gas station, lunch was a soft pretzel & dippin dots, and dinner was at 11 pm when i got home (and yes, i did still have dessert ). this kind of spontaneity doesn’t really feel out of the norm for me anymore, but i remember times when that definitely wasn’t the case. when i was first developing my ed, we went to universal, and i made such an inconvenience for my family trying to find somewhere i could eat (even though i had researched the food EXTENSIVELY before going, because you know, that was really all i thought about ). the day after i was completely released from the hospital, we went to kings island. and while i was in real recovery by that point, i still had a long way to go. since i was with my friend and not my parents the entire time, i was able to stick to my “safe foods”, and when we did get ice cream, i threw mine away even though i was still hungry. i’m so thankful that now, fun things like amusement parks are something i can do & actually focus on the memories i’m making, not the food. i’m glad to be able to be spontaneous & go with the flow instead of being known as the picky one. and that’s not to shame anyone who IS where i was 2 or 3 years ago, or to say “look at me and everything i’ve done”, but to tell you that you can overcome that. recovery is hard, but those moments where you can look back & see how far you’ve come make it so worth it 💘💘

life hack 101: freezing firm tofu (then thawing/squeezing out the water ) makes it taste super MEATY?! when I’m not ordering in or eating out I def cook/experiment with different nutritious recipes and lately I’ve been into cooking A LOT of tofu bc its CHEAP, YUMMY and a GREAT source of protein.
