I don’t have shame admitting that I bribe myself every morning to get to the gym. I enjoy a Rice Krispies treat every morning along my Alani Nu Drink. For breakfast I enjoy cottage cheese with peaches. Meanwhile for lunch I make sure I get my protein. Cook pasta in salted boiling water 10 minutes or until almost tender. Add asparagus; continue cooking 3 to 4 minutes or until pasta and asparagus are tender. Drain well. 2. Meanwhile, heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Remove from skillet with slotted spoon; pour off drippings. 3. Heat oil in same skillet over medium heat until hot. Add shallots and garlic; cook 3 to 4 minutes or until tender, stirring frequently. Remove from heat. Add beef; toss to mix. Season with salt and pepper, as desired. 4. Combine beef mixture with pasta and asparagus in large bowl; toss well. Sprinkle with cheese, if desired.

Haphazard prep photos today. Still waiting on a pork shoulder to come out of the smoker, but that won't happen til much later tonight... Sheet pan egg whites with spinach for breakfast (and I'm realizing I've written that nearly every Sunday for the past 20ish months, which is A LOT of egg whites ). Romaine with shredded salsa chicken in the instant pot, roasted corn salsa, pico, etc. for cold lunch salads. Cottage cheese and assorted raw veggies for meal 3. Dinner: smoked pulled pork, broccoli/kale slaw, air fryer sweet potato sticks. 🍝 Spaghetti Squash Chicken Alfredo 🧀 & chicken marinara! Spaghetti squash is great alternative for regular spaghetti, because it’s low in carbs and high in fiber and potassium. Also, don’t forget, it’s a fall fave! 🍁 This is my favorite meal of the fall! And it’s super versatile! I love me some cheese 🧀 and my husband loves tomato sauce🥫 . DO BOTH! The main components are the same! We like ours with sautéed onions🧅 , steamed broccoli 🥦 , and shredded slow cooked chicken breasts. I typically make enough for at least two meals for both of us, because if you are putting the work in might as well make enough for leftovers (meal prep! ). Directions: 1. Preheat oven to 375 F 2. Rinse and dry squash 3. CAREFULLY cut horizontally 4. Clean out the innards! 5. Lay squash on sheet pan inside part down 6. Pour water into sheet pan so much that is fills the entire pan 7. Bake for 40-60 minutes (longer if you are cooking more than one at a time ) 8. Squash should have a golden brown on the outside and sort of dent in easily. The inside should shred easily with a fork. 9. Top with whatever you want and enjoy : ) Tips: - Sautée your onions in water to lower fat and calories - Save the seeds and bake them while the squash bakes (around 15 min ) - Taco spaghetti squash is good too! What else can we do with spaghetti squash?!?!?!

Does anyone else love a good Sunday grocery store trip?! My favorite Sunday morning activity is planning our meals for the week. Since I’m cooking for 2 (including 1 former football player who needs a lot of food ) it could get super pricey if I wasn’t paying attention. In fact, the first few weeks we lived together I may have spent over $200 on our grocery bill 😬 Not sustainable and definitely not necessary, hence the magic that is meal prep! For me, meal prepping means only buying food that we need and are going to eat, and not letting food go to waste. Except those couple of times I absolutely hated the recipe... Eating healthy does not have to be complicated or pricey, and I wanted to share my grocery list to prove that! I will be sharing the recipes as I make them - both crock pot recipes which I find are the easiest for cooking large quantities of food for the entire week. Happy shopping and meal prepping! ✨🤪

Mushroom Chicken In White Sauce 😋🍄🐔 ⁣ Tag someone who would love this 😍⁣ ⁣ This recipe takes just 25 minutes to make. It's super easy, delicious, Keto-friendly and gluten-free⁣ ⁣ 📝INGREDIENTS📝⁣⁣ (For 4 Servings )⁣⁣ 2 Tbsp olive oil⁣ 1.5 Lb (700g ) chicken breast⁣ 1 medium onion, diced⁣ 6-8 cloves garlic⁣ 1 oz. (30g ) sun-dried tomatoes, chopped⁣ 10 oz. (300g ) mixed mushrooms, sliced⁣ 3/4 cup chicken stock⁣ 1 cup heavy cream⁣ Salt and pepper - to taste⁣ 10 sprigs of fresh thyme - divided⁣ ⁣⁣ 👩‍🍳PREPARATION👨‍🍳⁣⁣ 1. Season the chicken breasts on both sides with sea salt and fresh ground black pepper.⁣ 2. Heat oil in a large skillet over medium heat, and brown the chicken, for about 2-3 minutes on each side (at this point, the chicken will not be fully cooked as we will continue to do so, later on, with sauce ). Set aside.⁣ 3. In the same preheated pan, add the onions, garlic, sun-dried tomatoes and mushrooms, and sauté for about 5 minutes.⁣ Take half of the thyme sprigs, pull the leaves off of the stems and add them to the pan. Pour in the chicken stock and bring to the boil.⁣ 4. Mix well with a wooden spoon, scraping any brown bits left on the pan's bottom.⁣ 5. Stir in the heavy cream and reduce the heat. Once simmering, return the chicken to the pan, nestling it into the sauce. ⁣ 6. Where would you start with this bad boy?? . It just doesn’t get better than a fully loaded steak salad. The key for me is variety... and I love spicing things up with different flavors, textures, fresh herbs, and variety. You can use whatever you have and use whatever protein you like best. By @shredhappens . Here is everything I got going on: . 1. As always, I start with a big base of greens. I used a bed of greens, some watercress, and cucumbers. Also added some fresh dill and thyme. Fresh herbs make a huge difference. Tarragon, mint, parsley, are always clutch for me too. . 2. Topped with sliced juicy steak - 3oz or so. I just seasoned some strip steak with salt + pepper then cooked in a pan with garlic, thyme and a tablespoon of butter. Let it rest, and sliced some up. I’ll be using the rest throughout the week on salads. . 3. Sliced avocado, local cherry tomatoes. . 4. Half a medium boiled egg. This boiled for about 7 minutes and the yolk was perfect. . 5.Topped with a simple homemade horseradish dressing (sour cream, horseradish, lime juice, mustard, dill, sea salt + pepper ). . 6. Some feta cheese and capers for good measure. . . Modify however way you want on ingredients / serving size however way you wish. . . Hope you guys had a nice weekend and ready to win the week. Chicken Marsala w/ Creamy Marsala Sauce 🍗😋 Eat or Pass? 😍 📷: @cookingclassy ---- Ingredients 🍱: 1 1/4 cups dry marsala wine* 1 1/4 cups unsalted chicken broth 2 (10 - 11 oz ) boneless skinless chicken breasts, butterflied and halved, pounded to an even thickness Salt and freshly ground black pepper 1/3 cup all-purpose flour 2 Tbsp unsalted butter 2 Tbsp olive oil 8 oz. cremini mushrooms, sliced 3 garlic cloves, minced (1 Tbsp ) 1 tsp minced fresh thyme (or scant 1/2 tsp dried ) 1 tsp minced fresh oregano (or scant 1/2 tsp dried ) 1 1/2 tsp cornstarch whisked with 1 Tbsp chicken broth (in a small bowl until well combined ) 1/3 cup heavy cream 1 Tbsp minced fresh parsley - DIRECTIONS 👩‍🍳: Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes. Season both sides of chicken with salt and pepper. add each side in flour mixture. Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken and let sear until cooked through, turn once halfway through, about 10-12 mins. Transfer chicken to a plate. Reduce temperature to medium heat. Melt remaining 1 Tbsp butter with 1 Tbsp olive oil, add+saute mushrooms. Just tossing occasionally (and increasing burner temp slightly as needed ), until mushrooms have shrunk and are golden brown, about 8 minutes. Add garlic during last 1 minute of sautéing. Remove pan from heat then pour in marsala, thyme and oregano. Return to heat, bring to simmer, then stir in cornstarch chicken broth mixture. Stir until thickened. Off heat stir in heavy cream, season sauce with salt and pepper to taste. Return chicken breasts to pan. Sprinkle w/ parsley! 💖

We thinkin Sunday salmon for tonight?? Maybe Sunday pasta? Whatever you guys are planning on whipping up, I hope it’s as good as this meal was🤤 & here’s a little inspo for my last min ppl... I’m in that group as of right now too hehe . . . Garlic salmon with cilantro lime cauliflower rice⏩ INGREDIENTS @sizzlefishfit salmon Riced cauliflower Cilantro Onion Vegetable stock Minced garlic Lime juice Sea salt Olive oil Tomato Avocado . DIRECTIONS Heat up olive oil + minced garlic on the stove while sautéing. Then add in riced cauliflower from, onion, & vegetable stock (a splash at a time until everything softens ). Lastly, add chopped cilantro & lots of lime juice & mix everything tg. I cooked the salmon on a George Foreman grill with olive oil & garlic. Serve the cauli with tomato, avocado, hemp seeds, the salmon, and a sprinkle of sea salt.
