𝔸 ℂ ℂ 𝔼 ℙ 𝕋🌸I was in quasi-recovery for so many years because I honestly never truly accepted that I had an eating disorder! Anorexia? No, surely not! That would never happen to me! But the truth is, you have to realise you have a problem in order to recover because otherwise you won’t change. When I hit rock bottom and nearly died on the emergency bed in hospital, that was a real kick in the face and made me realise how much of my life I had already wasted and I certainly was not prepared to lose any more of my life! I was finally ready to accept that help that I deeply needed! And I am so grateful to everyone that has stuck by me despite the endless struggles!🤝. 🌸 🌸 🌸 . So, pictured here is a lovely bowl of udon noodles, tofu puffs and veggies with my wonderful peanut sauce - the recipe for it is in my ebook (link in bio! )💕✨🌸

🦎13/07/20❤️ Pic 1 - #dinner Pic 2 - #breakfast Pic 3 - #supper Today was rough... it started off with a late morning. My mom and I were the only one awake even though it was pretty much lunch time. I didn’t know what to have, but ended up with having what I was craving; oatmeal with pear, cinnamon & sugar. It’s pretty simple, but made me feel so guilty:/ I added milk to it and I felt like I just kept adding unnecessary calories. I was actually a bit annoyed because I had to make it two times. Since I don’t allow myself to eat when I’m hungry, I have to make each meal count. I couldn’t help but think “carbs, carbs & unnecessary calories” throughout the entire meal. My mom only had two crispbreads, but she tries to reassure me. After breakfast I went for a walk. I had to get out of the house before the guilt got unbearable😖 I went to the store and I am actually not supposed to go the store because I keep buying things for others in my family. I went in with a hope to find a pudding I had been craving. Unfortunately... I didn’t. I ended up buying things for my family which we don’t need🙃 (I also got my steps in which was a plus as I’ve been kinda slacking lately ) When I got home my grandparents were here. It’s always difficult when they’re here🥺 I found out they were going to eat here too. That was hard. My mom started making dinner while my grandparents were outside painting the house. They had something else for dinner, so I had some leftover rice from yesterday and some chicken. My dinner got rushed - which I HATE. Again - I want my meals to matter. The rice was cold and stale so I couldn’t finish it all. My mom got kind of dissatisfied, but got over it quickly. My grandma was triggering throughout the entire dinner; she kept saying “I can only have half, got to watch the weight” and she told my grandpa not to have so many fries. My sister was also triggering by having a tiny portion and not eating anything after. I’m so scared she is going to be scared of eating ice cream and to enjoy herself because of me🥺 I could tell she wanted ice cream with the others after dinner, but she declined. It’s probably my fault😔

I’m about to make #halfhomemade brinner at the house, which is always lovely. But THIS? This was yesterday’s brunch from @blts_stl ! I got their house cheddar n’ jalapeño biscuits with sausage gravy and Y’ALL. 😳 This plate was the TRUTH. ~ French Toast ~ 🍓🍞☕ This classic French Toast recipe is so delicious, easy to make for breakfast or brunch! Ingredients 4 eggs 1 cup milk/non dairy milk 6–8 slices bread Vanilla extract - 1tsp Pinch of flour Sugar - 1tbsp Cinnamon - 1tbsp Butter Method • Whisk milk, eggs, sugar, cinnamon, flour and vanilla extract in a large bowl. You can add more cinnamon and sugar, it all depends how you prefer it. • Place pan over medium heat and melt butter in pan. • Dip bread slices in egg mixture and make sure both sides are well coated. • Place the bread in the pan and cook until golden brown on both sides. Roughly 2 minutes per side. Raise your hand if you are a breakfast sandwich lover! 🙋🏻‍♀️. . What do you usually have for breakfast? . My breakfasts are pretty easy lately. Basically combining oats with collagen powder, add in oat milk, top with summer fruits, nuts, seeds/nut butter etc. Because it only takes 2-5 minutes of my time I can start the day earlier😏 . However, that doesn’t mean I can enjoy a breakfast sandwich later😬 I usually have avocado toast/frittata/breakfast sandwich/breakfast pizza for lunch! This is what I prefer at the moment and it is totally fine!🙌🏻 You don’t have to have labels for your meals! You can have omelette for dinner or you can have steak in the morning for breakfast! No one has a right to judge you! You do you and be happy ☺️ . Hope you have a love start of the week! —Stay Safe—

FLUFFY Oatmeal Banana Pancakes paired with ‘Good For Your Gut Health’ RASPBERRY CHIA JAM make the best breakfast duo!!!😍♥️♥️ Happy Monday!!! PANCAKES Ingredients: 1 cup oat flour 1 banana, mashed 1 egg 1/2 c almond milk 1 tbsp maple syrup 1/2 tsp vanilla extract, 1/2 tsp cinnamon 1/2 tsp baking powder Directions: combine all the ingredients. Preheat using a tablespoon transfer the batter to a pan coated with vanilla ghee at medium-low heat with lid for 3-4 minutes on each side. . RASPBERRY CHIA JAM Ingredients: 10 oz frozen raspberries 1 scoop beef gelatin (I use @vitalproteins ) 1 tbsp maple syrup 2 tsp chia seeds heat raspberries in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. use a spoon to mash the fruit to your desired consistency. Stir in the chia seeds until combined. then, stir in maple syrup and beef gelatin. let it cook for 1 minute. remove from heat and let cool for 5 minutes.  you can serve it immediately or leave it in the fridge in a sealed container to thicken for 2-3 hours or overnight. the jam is good refrigerated for up to 1 week🤍 #hmsfpancakes

This is my first brunch back in Chicago, so that means I’m officially back!!! 🧇Today is my 6 month with my amazing boyfriend (even though sadly most of that time was spent far apart in quarantine ), so we made heart shaped waffles to celebrate brunch-style! 💕We used @orchidsnsweettea_ recipe for vegan funfetti waffles, which were very fun, as the name implies! Sprinkles are just so perfect for celebrating! We are also planning to make a fun dinner and maybe a cake or other special dessert, so stay tuned and send any recommendations if you’ve made any great cakes/desserts recently!
