Cold Beets Salad 🍴🥗 Beet salad is probably one my favorite for all season long especially summer. I like to slice and drizzle them with some olive oil & traditional balsmic vinegar from @vancouveroliveoil and salt/pepper. The refreshing cold beets with slight soft crunch and sweet bitter taste really satisfied my belly when it's too hot to eat anything. The organic golden beets from @wholefoods was exceptional sweet! I typically wash and roast them (wrap in foil individually ) with the skin on for 30-40 min depending the size at 400F. Once they cool down, the skin can easily be peeled off and I stored them in the fridge. Make sure you are well cover the color from beets do stain! 𝐐𝐔𝐎𝐑𝐍 𝐒𝐈𝐙𝐙𝐋𝐄𝐑 🌶 🔥 ⁣⁣ ⁣⁣ I’ve just returned from the most amazing break with my family in Norfolk, 5 days of food, Prosecco & hot tubbing in the sunshine ☀️ ⁣⁣ ⁣⁣ We had lots of delicious food but this meal from @anvilcongham was incredible 👌 ... there were so many amazing options on the menu (veggie/vegan/pescatarian and meat ) it took so long for us all to decide what to have!⁣🤩⁣ ⁣⁣ I went for creamy mushrooms on bloomer bread followed by the quorn sizzler; a hot platter of onions, peppers and quorn with a side of chips and salad 🍟 🥗 ... I of course flushed it all down with a rhubarb and rose g&t 🍹⁣(and may or may not have had eton mess for pudding too! )

Cook 4oz wide Lo Mein noodles as per packet directions. Whisk sauce: 1/3 cup liquid aminos, 1 tbsp + 1 tsp maple syrup (or to taste ), 2 tbsp lemon, 2 tbsp garlic chili sauce, 2 tbsp minced ginger, 1/4 tsp cayenne, 1 tsp sriracha (optional ), salt to taste. Once tofu is ready, heat skillet and add sauce. Cook until sauce starts to bubble. Add baked tofu and 4 sliced scallions and keep stirring while heating. Quickly add cooked Lo Mein noodles and stir for another minute or so until heated through. Remove from heat and add cooked veggies of choice. (I added some blistered bell pepper and spinach. ) Fold in 1/4 cup chopped roasted peanuts. Trying my hand (see what I did there? ) at a lighter style of chiaroscuro (the style of art with dramatic light and shadows. ) Channeling some of Vermeer's The Milkmaid vibes, but focused on hands, making some preserved lemons. Super cinchy btw. Just cut some lemons add lots of salt inside them and in jar, some peppercorns, bay leaves, and fill up with lemon juice. Then just give the jar a shake every day for a month and they're ready. Do you not get inspired when you see delicious, local berries or are you normal? 🍓 These tartlets are here literally because I found sweet local raspberries! They are so ripe & juicy, they were smooshing as I was placing them! All the berries here are local, if not organic. ❤️💜💙 It’s a bit of a variety of flavours but it works! I want to get different tart rings so I can have juuuust a little bit more height, but I’m very glad it’s not too heavy on the cream. I could’ve added just pastry cream & fruit, as most fruit tartlets are, but that’s just too heavy on the cream & if you know my opinion on flan 🍮 you know that’s not gonna fly 😆 The building blocks: - Shortbread crust with almond flour by My Paleo Pâtisserie - Reduced raspberry jam by me (zero sugar ) - Orange friand by Sweet (Ottolenghi ) (made gluten & grainfree by me ) - Pastry cream with almond milk & flavoured with tonka bean by My Paleo Pâtisserie - Berries The zing of the sugarfree raspberry jam elevates it, even though it’s already barely sweet & you’d think the orange in the friand would be the odd one out, but it’s not! Surprisingly, it’s not! I cut them the next day after making. Tarana, or Balkan “pasta” with tomato, chilli, parsley and oregano baked feta. ❤️ Tarana is made with eggs and flour into quite a stiff dough which is grated. The resulting bead-like shapes are all charmingly unique, like snowflakes. I make it in little batches (2 eggs to 200-250g 00 or plain flour ) and use it fresh, though usually it is prepared in large quantities and dried for use in a variety of dishes throughout the year - mains, soups, or my (childhood ) favourite, simply cooked in salted water, a little butter, with white cow’s or sheep’s milk (lime feta ) cheese grated on top for a light meal at any time of day. This dish is essentially that but a little elevated by baking feta in olive oil, with a few chopped tomatoes, chilli, chopped parsley, and oregano. A delicious, simple, family meal, which just needs a little love and patience. ❤️ I will add a how-to for the tarana on my stories later, and save it in my highlights. . . . It’s not exactly breaking news that potatoes are the backbone of eastern European and Russian cooking. They’re cheap, filling, and easy to store through the winter, which is how they became the hallmark food of our people. And I am not mad about that. . . Boiled young potatoes with dill are one of the most beloved recipes in all of Ukrainian cooking. 💫Ricotta and Grape Toasts💫 Sweet and savory ricotta and grape toasts are another one of those special but really easy appetizer recipes I am so fond of. Ready to go in minutes, they look and taste delicious. The grapes smell amazing when they come out of the oven and their sweetness is really intensified. You can also make this in stages by making the toasts in advance and using them when you need them. Ingredients 1 pound/ 450 g seedless red grapes Olive oil 1 small baguette, cut into 1/2 inch thick slices Sea salt 1 cup ricotta cheese Honey, for drizzling (optional ) Thyme sprigs (optional ) Instructions 🌱Preheat oven to 400°F/200°C 🌱Place the bread onto parchment lined baking sheet, brush with olive oil on both sides and sprinkle with sea salt. 🌱Bake for around 20 minutes or until toasty. Cool for a few minutes. 🌱Meanwhile place the grapes on a separate baking sheet, season with salt and sprinkle with olive oil. Bake for 8-10 minutes until they are roasted and one or two are just starting to burst their skins ). 🌱Season the ricotta well and spread each toast with a generous amount. 🌱Top with grapes and a thyme sprig and a squeeze of honey if you like (I took most of my grapes off the stem so they're convenient to eat - but you can leave some on the stem for pretty presentation ).

When I first heard of the #chiaroscuroinspired challenge hosted by @boxofspice and @twiggstudios I was more than a little confused. But after a little bit of research I discovered how much I loved this style of photography that uses sharp contrasts between light and dark. So here’s my humble attempt at understanding the style and theme “at the table” for days 1 & 2.
