We seem to be having a lot of Turkish “brinner” type dishes in the week at the moment (usually if I’m pushed for time and I always have the ingredients I need in the fridge to make meals like this ). Tonight it was Sucuklu Menemen (Cured Turkish Beef Sausage with peppers, onions, tomatoes and spiced scrambled eggs ). Çılbır is often the dish referred to as “Turkish Eggs”, but for me, Menemen always wins hands down. 100g sucuk, 2 sivri / 6-8 padron peppers, 2 spring onions, 4 large ripe tomatoes, 1 tsp each dried mint, dried oreagno, fresh parsley, a little water to loosen it, and 4 large / 5 medium eggs. Now, some of you already know much I love @thescandicook Sophie’s buns, as I’ve posted about them before (seriously, she has THE BEST burger bun recipe ), and tonight, another recipe of hers didn’t disappoint. I saved this Vietnamese style chicken salad recipe last week when Sophie posted it (as I usually have the ingredients she mentioned in my fridge ), and although I was missing a couple of things, I still made it work using the leftover chicken kebabs from last night’s BBQ, and it was absolutely delicious. Last night’s Surf and Turf 10th anniversary dinner. We bought some beautiful rib eye steaks from @gingerpigltd in Wanstead, ordered a batch of fish and seafood for the next couple of weeks from @oceanwavefisheries (hence the black tiger prawns, which are of course no longer black once cooked ), which I coated in the most finger-licking, deliciously messy glaze once cooked, and super-moreish potato salad and green bean recipes courtesy of Helen @foodstories for @outbackbbqs (recipes on their website ) - yes, we enjoy eating out, and it was such a treat to be able to do it for the first time yesterday since March, BUT cooking food like this is always such a pleasure, especially when it’s for a very special occasion. #melizcooks #happyanniversary #f52community

AD| What would you say if I told you this was a meatless Bolognese? I’m always dubious about trying meat alternative products, but this @unbelievablealt beefless mince was absolutely brilliant— even when it was cooking it looked like meat and the texture is fantastic; you simply fry the beefless mince in a little oil for 6 minutes, add some water, cook for another 6 minutes and then add it to whatever recipe you’re making. I added softened onions, carrots, celery and garlic, as well as my usual spices and herbs; ground cinnamon, dried mint, paprika, smoked paprika, oregano, salt, pepper, and balsamic vinegar and pomegranate molasses for added umami, which is essential when cooking with meat alternative products. Chopped tomatoes, tomato purée and a little water, simmered for a few mins and et voila, done, with fresh parsley to finish. Dinner was a small portion of homemade vegetarian macaroni in the oven which is a traditional Turkish dish. Kind of our version of lasagne with thick macaroni instead of pasta sheets. My lovely OH spent hours in the kitchen this afternoon making 2 meat versions & a veggie one for us to take to the family tomorrow. Obviously I needed to do a taste test & it was lovely! So, I had every intention of making the chicken roast on my last post today but I found myself in buttercream hell this afternoon (if you’ve watched my stories, you’ll know what I’m talking about ), so I made Tavuklu Bezelye (Chicken & Pea Casserole with carrots and potato, spices, onions, garlic ) instead, as basically I could chuck it all in a large pan and let it cook whilst i picked 69,000,000 hundreds and thousands off the kitchen floor. But, my little man is one happy boy, and that’s all that matters ❤️ What a meal. I usually make it with diced lamb or beef / lamb mince, but if I do make it with chicken, it’s always skinless and boneless chicken thighs. I’m going to roast some chicken today. I’m prepping a few bits for my eldest’s birthday tomorrow so I want something easy and tasty, resembling a roast dinner, that I can chuck in the oven today; and here it is. When I make this, I opt for a large, organic chicken, around 2.2-2.45kg; I slather it in unsalted butter, then some olive oil, dried wild oregano, lots of sea salt and crushed peppercorns, fill the cavity with a garlic bulb, lemon, rosemary, bay leaves and fresh thyme, and roast in a preheated oven at 220C fan on the bottom shelf for 20 mins, then turn down to 180C fan for around another 1 hr 15 mins (15 mins per 500g ), and add parboiled potatoes (roughed up, steam dried, oregano, salt ) and baby shallots, with a bayleaf and 1/2 lemon for the last hour of cooking time, baste the chicken, turn the potatoes after 45 mins in and baste the chicken again, and then roast for the final 15 mins. Social distancing at the beach, done right. If you look closely, you can see the little ropes and wooden posts used to create areas for healthy social distancing and each little section came with a terra-cotta pot for trash. It made for a much more civil day at the beach. ⠀ ⠀ Two weeks ago, we went to the beach and Salih brought a fresh watermelon right from the garden. Upon arrival, he threw the melon in the water to cool it down. I had never seen anyone do that but apparently this was normal for Salih! We swam with the melon, bobbing up and down for nearly one hour before he cut it open to enjoy! Have you ever tried this?

Sometimes, simple really is best, especially with half a beautiful boneless butterflied lamb shoulder from the @gingerpigltd and my homemade pide and homemade yoghurt. I spoke to my Aunty yesterday and asked her if there was anything other than oregano that my Halit Abi puts on his lamb shish, and just as I thought, the answer was no. The salt is ONLY sprinkled on while the shish kebab are cooking over hot coals on the mangal. Stops the meat going tough and also tames any flames (that sometimes rise up because of the fat dripping on the coals ). I just squeezed over fresh lemon juice to serve. Halit Abi has a marinade recipe that he sometimes uses for his lamb, but all I wanted to do was to replicate the beautiful simple flavours of his Lamb Shish that remind me so much of his infamous BBQs, and then stuff them into my homemade pide, and that’s exactly what we did. We all grew up living in each others’ houses (and pockets ) every weekend as children, and the mangal was always on (and usually still is when we get together - one day soon again, I hope ) - Halit Abi’s BBQs are always amazing, especially when his shish and köfte are matched with his beautiful rocket, tomato and spring onion salad (you can blame / thank him for my pomegranate molasses obsession since I was a child ), and my Revza Abla’s amazing fine bulgur rice, which I am yet to master, but I will (with her help ). I love them so much, and when I hopefully, one day, write a book, the recipes I have learnt from them will also feature, as well as my own, and the beautiful recipes that were handed down to us from my great grandmother, to my grandmother and my mum and my Aunties. My mum had such a special bond with her grandmother and it really shows in her cooking ❤️ Wow, that was a long post for a simple lamb Shish - but my heart, and “çok şükür olsun” (very thankful ), belly, are now both full after that. #melizcooks #nationalbbqweek #f52community AD| #gifted #melizcooksbbq

Friday Night Chicken. Used a similar marinade for these chicken breasts as I did on my lamb shish the other week (recipe below ), but subbed paprika for smoked paprika. Hummus. Before all this craziness started, I filmed quite a bit of content for my YouTube channel, and this plate of gorgeousness right here, was one of the recipes we filmed (this was the photo I took on the day, and I cheated by using some lovely, jarred chickpeas, but I did make it using soaked and cooked dried chickpeas the other week with the kids, so you know, I’m cool with it if you are! Food is subjective, everyone has a different way of doing things, different tastes and textures they prefer, different ingredients and brands etc, and that is totally fine, but smooth and silky hummus, with lots of good quality tahini (which makes all the difference ) and a good whack of fresh lemon juice, always wins for me. ) If you haven’t subscribed to my YouTube channel yet, PLEASE, PLEASE do! Tavuk Kebapı (Cypriot Chicken Tray Bake ). Why oh why, do I not cook this more often - the kids just polished it off. There are a lot of dishes that make me reminisce about my childhood, and this is definitely another one. We would have this and my mum’s fırın kebap (lamb and potato tray bake ) at least once a week when we were little. I love it with a simple coriander, tomato and cucumber salad, simply dressed olive oil, lemon juice and salt, and black olives too. Sometimes I make rice, sometimes I don’t. When I first posted this a couple of years ago, it was so popular and I think that once you’ve cooked it, you’ll make it over and over again. Traditionally, my mum would always portion off a whole chicken herself (I prefer just thighs/drumsticks, but you can use breast, just be careful as it can dry out, of course ), and her very humble ingredients consist of onions, potatoes, tomatoes, tomato purée, salt, pepper, olive oil, lemon, and parsley, but this is me, and I have inevitably added a concoction of spices and herbs to the mix. I’m doing a lot of recipe testing at the moment so I played around with the flavours a bit more today, and I think it’s even better, if that’s possible. Hellimli Zeytinli Pancakes (Halloumi & Black Olive Pancakes ). One of my most popular recipes from a couple of months ago using @jamieoliver 1 mug pancake method, these pancakes are loaded with grated hellim and black olives, fresh coriander and dried mint, and sprinkled with sesame and nigella seeds. Exactly the same flavours as my savoury Hellimli Zeytinli loaf cake, but are quicker to make (if you really want to make them authentic, caramelise a very finely chopped onion in a little olive oil until completely soft, caramelised and jammy, let them cool and add to the batter too for extra sweetness ). The recipe makes 4 large pancakes / crepes. Method on my stories. RECIPE 1 egg 1 mugful plain flour 1 mugful milk 100g finely grated Hellim / halloumi cheese 50g pitted black olives, finely sliced / chopped 1 tbsp dried mint 1 heaped tsp finely chopped fresh coriander (optional ) A sprinkle of sesame / nigella seeds (optional ) A good pinch of salt Whisk the egg well. Add dried mint, whisk in, add the milk, whisk, then whisk the flour until there are no visible lumps at all. Stir in the rest of the ingredients. Heat a little (1 tsp ) olive oil in a pan on a medium heat, then pour in 1-2 ladle-fuls of the batter until the bottom of the pan is evenly covered (depends on size of your pan, mine is big, watch my stories ). Sprinkle over a few seeds.Leave for a couple of mins until there is no visible raw batter on the top and the underside has browned, then flip over until the other side has browned. Repeat until all the batter has finished. Fill up with cucumber, tomatoes and lettuce leaves, like a wrap, or just eat as is. #melizcooks #pancakes #f52community
