BUTTERMILK PANCAKES 🥞 SERVES: 12 PANCAKES @cafedelites INGREDIENTS 2 cups all-purpose (or plain flour ) 1/2 cup granulated sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 1/2 cups buttermilk (plus up to 1/4 cup extra if needed ) 1/3 cup unsalted butter, melted 2 teaspoons pure vanilla extract 2 large eggs INSTRUCTIONS Combine together the flour, sugar (or sweetener ), baking powder, baking soda, and salt in a large-sized bowl. Make a well in the center and add the buttermilk, slightly cooled melted butter, vanilla, and egg. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay ). (The batter will be thick and creamy inconsistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple of tablespoons of extra milk into the batter at a time until reaching the desired consistency ). Set the batter aside for a good 10 minutes to let rest and settle the ingredients into each other while heating up your pan or griddle. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour 1/3 cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula, and cook until golden. Repeat with the remaining batter. Garlic Fan: I love garlic (which makes me safe from vampires harharhar 😂 ) and so for this quick breakfast -- or snack -- I decided to roast some garlic with the old olive oil, salt and pepper in a foil trick. Mashed it and added butter and basil leaves and spread it on toasted French bread, with a side of boiled eggs with a dollop of mayo. The result is a creamy, smokey, mellow, sweetish garlicky toast. Coconut Paratha . Happy Halloween y'all 👻 . Didn't get time to make something Halloween special today🙁 let's see if I can manage to celebrate belated Halloween with some spooky food tomorrow 😀 . Abhi k liye yeh! I have always seen sweet coconut rotis and that's been on my to do list. But anyways the sweet intake is on high these days, so skipped that for now😀 And thought of making its savoury version. Made a stuffing by sauteing lots of grated coconut with really small quantities of grated carrots, boiled poatoes, cabbage, capsicum and spring onion. Seasoned it with green chillies paste, garam masala, coriander powder, chaat masala. Stuffed it between 2 small puris and rolled a paratha. Fried it on ghee and it was ready to serve within minutes! I served it with coconut, cucumber, carrot raita. This was a good change from the typical vegetable parathas n I absolutely loved the taste of chatpata coconut with paratha😀 Since I can't click paratha pictures well, I've put a WIP paratha in the frame so that the stuffing can be seen😀 . Chickpea Omelette with veggies. 🌿 Breakfast packed with proteins, fibre and vitamins. Easy to make. It takes about 15 minutes.  Chickpea omelette 1 cup chickpea flour 1 1/2 cup of water 1/2 tsp turmeric  1/2 tsp sweet paprika 1/2 tsp baking powder 2 tbsp nutritional yeast 1/4 tsp salt Veggies 1/2 onion, chopped 1/2 yellow pepper, sliced 1/2 cup courgette, sliced  1/2 cup broccoli florets 2 tbsp soy sauce 1/4 tsp cayenne pepper Mix all the ingredients for an omelette in a bowl. Leave it for 10 minutes to rest.  In the meantime stir fry veggies. Preheat the frying pan on medium heat with 1 tbsp of oil. Once hot add onion, cook for 3 minutes. Next, add broccoli florets, cook for another 3 minutes. Then add pepper and courgette, cook for 2 minutes. In the end, add soy source and cayenne pepper, stir well.  Preheat the pan to make an omelette. The batter is liquid, almost like water. Once the pan is hot brush it with the oil. Use a ladle to pour the batter. A quick, simple, savoury breakfast with a slightly sweet undertone this morning - tempeh breakfast hash on a coarse bed of roasted and mashed plantain - highly flavoursome and delightfully filling. This is a rough recipe that is easy from start to finish. Enough for leftovers or to serve two. Ingredients for tempeh hash: - 2 medium potatoes, finely cubed - 1 tbsp olive oil - 2 medium stalks of leeks, slide into 1cm thick rounds - 1 romero pepper, finely cubed - 2 stalks spring onions, finely sliced - 1 packet @betternature_ Better Bites Tantalising Taco tempeh (kindly #gifted 💚 ) - 5 stalks cavolo nero, finely shredded - 1 tsp ground chilli, coriander and cumin - 2 tsp coarse black pepper - Salt - 1 medium ripe plantain - 1tbsp “butter” ( @vitalite used here ) Method: - Parboil cubed potatoes into a pot of boiling water until soft enough to pierce with ease. Drain and add to a heated and oiled frying pan. Over a medium heat, sauté potatoes for 10 - 15 minutes, adding salt and pepper - Add in leeks and Romero pepper, followed by spring onions, ground chilli and seasoning - Add in tempeh and fold into other ingredients leaving to further cook for 2-3 minutes. At this point add approximately half a cup of water, cavolo nero and leave the mix to simmer until everything is softened and flavours incorporated - Meanwhile the plantain was simply roasted on a high heat until bursting out of its skin, mashed to a course texture, returned to a heated pan with a tbsp of butter added, a little hot water to slightly loosen the texture, then followed by salt and pepper to taste. I’m off to now teach my next class this morning for the lovely ladies over at @_youmakeit in partnership with my @madeinhackney family. I’ll be teaching the ladies how to cook a plant based take on a very classic Jamaican dish called “rundown” - I’ll share some snippets later on. We both love cooking in our family, but it's harder now with the little one to cook together. So we are splitting the job and some recipes are always made by her or by him. This one is one of his recipes. Maybe not the classic recipe, but a very good one. One think that we love about this recipe (and most of the ones that we do periodically ) is that it's very versatile, easy to adapt to what you have at hand. What about you, do you usually stick to the original recipe or like to "play" with it? Blw tips: 👣 Take away in a smaller pan some of the mixture before seasoning, add the egg and make sure it's cooked very well, until the egg yolk is hard. Add a bit of water or tomatoes juice if necessary to cook more. Recipe: 1 Onion 1 small carrot 1 red belly pepper or kapia 400g mashed tomatoes in a can 4 eggs Fresh parsley Salt and pepper Chilli (optional ) White soft salty cheese (optional ) Cut the onion and red pepper very small and grate small the carrot. Add them to a big frying pan with some olive oil and saute them. Add the smashed tomatoes, cover and let them cook for a few minutes. Season with salt, pepper and optional some chilli and cook until a bit more if necessary (the onions and carrots should be softened ) add the eggs and cover 2-3 min, but stay close and make sure the egg yolks don't harden. Need to make a big old to do list this evening & get myself together 😅 Anyways for breakfast today I thought I’d try out some french toast dippers 🤪 Also how cute is this little heart board from @amazonuk ?! 🤍 They were so quick & easy to make & fully on plan (a sweet take on egg dippers ) 🌟 Perfect for breakfast or for a dessert of an evening! 👌🏻 I was inspired by the gorgeous @ellagetsslim ! 💛 To make: I used 2 pieces of wholemeal toast (HEX B ) 🙌🏻 I firstly cut off the crusts around the edges of the bread & then sliced my bread into 4 dippers! ✨ Next I whisked up 1 egg in a bowl & added in a few drops of Vanilla essence before dipping them in on both sides to coat! 🥰 Then finally heat a pan up with some @frylighthq & toast the dippers on both sides until golden (only a few minutes is needed ) It’s really that easy! 💁🏻‍♀️ I did also sprinkle them a little sweetener! 😜 I served mine with the @marksandspencerfoodpr Salted Caramel Chocolate Spread (4.5 SYNS per tbsp ) 🤩 I can’t get enough of it! It’s SO GOOD! So definitely get on the hype! I melted mine 👌🏻 And ofc some chopped up berries which I then also dipped in the leftover spread! 🍓 DIVINE! 😍 These were absolutely lush 🤤 Something a bit different & I mean is there anything better than dipping something into a melted spread?! 🤪 It felt like eating Churros for breakfast... which honestly I’m all for! Yog bowl is more cultured than I am 🤔 . Good morning Peeps! ☕ Getting straight to the point, my body needed something simpler and plainer this morning after all the slightly, let's say, "less nutritionally dense" foods I've been eating since I got to uni 😅 . Happy Monday! I unexpectedly took a little (much needed ) break off Instagram this weekend while visiting family and my sister, who I haven’t seen in 2 months!!! This morning I said goodbye to my sister, walked on the treadmill in the hotel gym (was completely empty! ), and took a walk down the street to Starbucks before flying home later today. Will do a full update tomorrow, but for now, sharing a picture of my DELICIOUS breakfast from last week. Two @quaker rice cakes with @samsclub almond butter, one with @traderjoes pumpkin butter and the other with @traderjoes fig butter, both with @dolepics banana slices, cinnamon, and chia seeds😋
