I have zero regretti about this spaghetti 🍝 Homemade whole wheat spaghetti frittatas are so tasty, so easy and the recipe makes 8, so it's perfect for family dinner, batch cooking or a dinner party ❤️ - 150g wholewheat spaghetti - 30g of smoked tofu (I used @cauldronfoods marinated tofu pieces ) - 1 small onion - 30g of pitted green olives - 100g of soy cream - 60g of vegan pizza cheese - pinch of mixed herbs and salt - ground black pepper - 4 basil leaves Preheat over to 200degrees and grease a muffin tin. Heat the spaghetti until al dente in pot of salted water. Meanwhile chop the tofu, onion and green olives. Cook the tofu on a high heat and once golden add the onions and olives and cook until soft. Once soft add the cream, cheese and herbs. Once the spaghetti is cooked, drain and add to mixture. Coat the spaghetti thoroughly with the sauce. Add the mixture to the muffin tins and garnish with any leftover cheese. Bake in the centre of the oven for 15-20mins. As the nights get colder, dinner gets hotter 🔥 . . . . . Vegan 🌿 kimchi miso noodle soup is so full of probiotics and immune strengthening ingredients, it is the perfect dinner for cold nights ❄️ If you want this to be vegan just be sure to check the ingredients in the kimchi. It tends to use fish stock, but there are plenty of brands that make it without - 1 1/2 tablespoons of kimchi - 1 tablespoon of kimchi juice - 1 1/2 teaspoon of miso paste - 1 stalk of lemongrass - tofu (however much you want ) - 1 nest of wholewheat noodles - 1/2 red bell pepper - small handful of beansprouts - 1/2 cup roughly chopped cabbage - 1/4 carrot (ribboned ) - 1 teaspoon chilli paste - 1 teaspoon ginger paste - 1 teaspoon minced garlic - 1/2 lime - 1 teaspoon light soy sauce - 4 cups of water In a hot oiled (I use frylite ) pan add your minced garlic, chilli, soy sauce and tofu and fry until there's a lovely golden colour. Once the tofu is fried add your chopped veggies and kimchi. I like mine crunchy so I don't cook them too much. Add your water, miso, kimchi juice and lemon grass. Depending on how hot you like it you can add more chilli like I did 🔥. Once the flavours have infused add your noodles to the pot and more water if needed. I also threw in more kimchi juice cause I adore it 😍. But it's all personal taste. Talk about tasty 🔥😍 I love a comforting bowl of curried chickpeas 🥰. This is a great meal to batch cook at the start of the week as well 😉. I garnished mine with coriander and a squeeze of lemon. Winner winner carb filled dinner! 🍝 . . . . . Feeling super lazy and want something quick and comforting like me? Then this Cajun prawn pasta is perfect for you 😉 - wholewheat pasta of choice - king prawns 🦐 (I had some leftover from my unreal Thai soup, so not sure what the measurement was 🤷🏻‍♀️ ) - 1 garlic clove diced - 1 1/2 teaspoon of tomato puree - 1 teaspoon of Cajun seasoning - 5 cherry tomatoes 🍅 - handful of kale - wild rocket - coriander 🌱 - salt and black pepper Throw your pasta in a pot of boiling salted water and cook per instructions. Whilst the pasta is cooking put the garlic and tomatoes in a pan coated with frylite. Once the tomatoes go soft add the tomato puree, Cajun seasoning and prawns to the pan. Cook until pink. Once pink add a few table spoons of pasta water and then add the kale (make sure it's thoroughly washed and stalks removed ). At this stage the pasta should be done. Drain the pasta and add to the sauce. Serve with some yummy peppery rocket and top with coriander to compliment the Cajun flavours. Ok, honesty time! . . . . I can sometimes get bad anxiety. And when I'm anxious I lose my appetite altogether. I just can't bring myself to put anything together because my head is too busy with all the other thoughts swirling around in it. And then this is adds a new level of stress. . . . . I have found that this is the perfect breakfast for those occasions. When I know I have something coming up that will kick off my anxiety I like to prep everything the day before. This is my super simple overnight bran oats with some super berry mix, chia seeds, flax seeds and raspberries on top, all mixed together with vegan yogurt and thrown in the fridge for 8hours. It means I have one less worry when I get up. Even if this is the only meal of the day then at least it's delicious, filling and nutritious. It's ok not to be ok, but always remember to be kind and more importantly, be good to yourself! You may not feel like it sometimes, but you deserve it ❤️. Got absolutely drenched in the rain today, so to warm myself back up I made the most delicious homemade Thai inspired shrimp and noodle soup 🤤🍜🦐🌶️ . . . . . . . Made with plenty of veg, low salt, plenty of spice and wholewheat noodles this is bound to kick the immune system up a notch! Luckily I had some Thai paste left in the cupboard so I used 3 teaspoons of that in 4 cups of water with a table spoon of light soy sauce. Tossed in red onion, peppers, carrots, cabbage, edamame beans and beansprouts. Simmer for 15-20 with a few bits of lemongrass. Remove the lemongrass and add the wholewheat noodles and marinated shrimp. Bring to a medium heat until noodles are soft and shrimp are lovely and pink 😊. Serve with fresh coriander, red chillies and if you like a bit more heat like myself, then a touch of siracha 😉 . . . . Oh dayum!!!! 🤤 - 2 x hake fillets - 130g cous cous - 3 x asparagus - 4 x cherry tomatoes - olive oil - garlic (chopped ) - chili flakes - tagine spice - sea salt - sliced lemon - onion powder Roast the garlic in a pan with 3 teaspoons of olive oil. It will help the garlic release it's yummy yumness. Just use as much garlic as you like. Mean while pre heat the oven at 180 degrees and line baking parchment with 4 lemon slices. Once garlic darkens add the chili flakes and onion powder. Give it a good stir and take it off the heat and let cool for 5 mins. Place your 2 hake fillets on top the lemon slices and pour the cooled garlic oil over the fish and salt to taste. Fold the paper into a parcel and place in oven for 15mins. 5mins before you take the fish out, put your cous cous in a bowl and add a teaspoon of the tagine spice. Pour boiling water until it covers all the cous cous and leave to stand. Spray some fry lite (or use oil ) on a pan and once hot, throw in your veggies and let them cool for the last few mins. You still want a bit of crunch. Take the hake out of the oven and leave to stand for 1 min. Then gently lift your hake and place on top of the cous cous. Throw your veggies on top and don't forget to pour that gorge oil that's left in the parcel over everything!!! Winner winner carb filled dinner! 🍝 . . . . . Feeling super lazy and want something quick and comforting like me? Then this Cajun prawn pasta is perfect for you 😉 - wholewheat pasta of choice - king prawns 🦐 (I had some leftover from my unreal Thai soup, so not sure what the measurement was 🤷🏻‍♀️ ) - 1 garlic clove diced - 1 1/2 teaspoon of tomato puree - 1 teaspoon of Cajun seasoning - 5 cherry tomatoes 🍅 - handful of kale - wild rocket - coriander 🌱 - salt and black pepper Throw your pasta in a pot of boiling salted water and cook per instructions. Whilst the pasta is cooking put the garlic and tomatoes in a pan coated with frylite. Once the tomatoes go soft add the tomato puree, Cajun seasoning and prawns to the pan. Cook until pink. Once pink add a few table spoons of pasta water and then add the kale (make sure it's thoroughly washed and stalks removed ). At this stage the pasta should be done. Drain the pasta and add to the sauce. Serve with some yummy peppery rocket and top with coriander to compliment the Cajun flavours.
